Halfway between Miramont-de-Guyenne and Lauzun, in Bougougnague, Olivier breeds and force-feeds fattened ducks in the traditional way, which he then transforms in his laboratory to European standards. He chose a small family farm to ensure the quality of his products, to maintain good breeding conditions but also a good standard of living. “Letting time and seasonality happen”, such is his state of mind. The laws of nature are not disturbed, which gives duck meat a tenderness and an authentic taste. He maintains the tradition by using ancestral techniques such as gavage on straw with grain corn and free-range breeding. If you are curious to discover the farm, it opens its doors to visitors and has been organizing relaxation days on the farm since summer 2020, punctuated by a convivial meal.
